4 - 4 1/2 cups (500 - 540g) flour

1 tablespoon (11g) sugar

2 1/4 teaspoon (12.5g) instant yeast

2 1/2 teaspoon (15g) salt

1 2/3 cups (380g) warm water

Steps

Put 4 cups flour and all salt into bowl

Mix warm water, sugar, and yeast together

Wait 5 minutes for yeast to bubble

Mix the above together

Knead until dough is slightly bouncy, incorporating flour as needed

In lightly oiled bowl, let dough proof for 1-2 hours or until doubled in size

Split dough into two parts, shape into loaves

Lightly wrap loaves in greased plastic wrap
-
Set oven to 450F while loaves proof for another 45 minutes

Lightly dust then slash tops of loaves
-
Bake for 20-25 minutes, 190 degrees F internal temp
