Ingredients

  • 4 - 4 1/2 cups (500 - 540g) flour
  • 1 tablespoon (11g) sugar
  • 2 1/4 teaspoon (12.5g) instant yeast
  • 2 1/2 teaspoon (15g) salt
  • 1 2/3 cups (380g) warm water

Materials

  • large mixing bowl
  • oil
  • parchment paper
  • measuring cups
  • scale (optional)

Steps

  • Put 4 cups flour and all salt into bowl
  • Mix warm water, sugar, and yeast together
  • Wait 5 minutes for yeast to bubble
  • Mix the above together
  • Knead until dough is slightly bouncy, incorporating flour as needed
  • In lightly oiled bowl, let dough proof for 1-2 hours or until doubled in size
  • Split dough into two parts, shape into loaves
  • Lightly wrap loaves in greased plastic wrap
  • Set oven to 450F while loaves proof for another 45 minutes
  • Lightly dust then slash tops of loaves
  • Bake for 20-25 minutes, 190 degrees F internal temp
